Jerk is a unique Jamaican way of preserving and cooking meat,
originally pork and chicken, now Mama’s legendary Vegetarian Burgers
are specially 'jerked'.
The native Arawak Indians, started the
Jerk phenomenon using Jamaican pimento (what we call all spice) and
combined it with hot scotch bonnet peppers, thyme, garlic, salt &
scallion.
Recipes have been passed down through
generations and techniques kept secret. Competition and pride runs high
among jerk cooks in Jamaica, but we challenge anyone to beat the
intense flavour of Mama’s Jerk Marinade.
